Varietals Currently in Development

Chambourcin (sham-bor-san)-
Produces a medium-bodied red wine similar to a Pinot Noir,
with a fruity aroma and cherry, earthly/spicey complexities.
Serve with barbecue, pork, and pasta dishes.
Chardonel (shahr-du-nel) -
As a cross of the famed Chardonnay grape with the popular Seyval,
Chardonel is usually barrel fermented, very dry and full bodied.
This is great with heavier seafood dishes, as well as chicken with cream sauces.
Norton/Cynthiana (sin-thee-ana) -
Norton grapes produce a rich, full-bodied dry red wine that can be
similar in style to Cabernet Sauvignon, with the spicy overtones of a Zinfandel,
and berry flavors that go nicely with red meat, smoked meat, and wild game.
The wine may be bottled as either a Cynthiana or Norton.
Cayuga (ki-u-ga) -
This white grape hybrid from New York for wines recalls the best German Reislings.
Light, fragrant, fruity, and semi-dry, Cayuga is enjoyable alone or with light foods and appetizers.
Marechal Foch (mar-esh-shall-fosh) - Often called "Foch" -
Foch is an inter-specific red wine grape that was developed in Alsace, France by the
renowned grape hybridizer Eugene Kuhlman. Foch is used to make a variety of styles of wine,
ranging from a light red similar to "Beaujolais" to more extracted wines with intense dark
inky purple color and unique varietal character.
This beautiful grape yields juice that smells and tastes like sweet cherries.
Foch also has a higher sugar content and better balance of acid than traditional juicing grapes
Vidal Blanc (v-dol blonk) -
Vidal Blanc, often called "Vidal", is a French hybrid, meaning it was crafted from two
different grape parents. Vidal was created from the parents Ugni Blanc and Seibel.
Ugni Blanc is also known as "Trebbiano" and is the white grape used in Chianti blending.
In general, Vidal Blanc is not normally grown to create straight table wine.
Instead it is used to produce some quite tasty late harvest sweet wines.
Vidal is often used to create "Ice Wines" with a distinct apricot and tangerine flavor.
